If you’re talking Linux here, then there are a ton of options how to shove an audio stream across a network.
You can use http://en.wikipedia.org/wiki/MPD_%28Music_Player%29 for instance.
What you are maybe interested is having something like an AirPort, which can be remote controlled thru iTunes.
