The unit is never rebooted (even if it where then it would restart the process). So I’m not sure why it is dying every few days.

The only thing I can think that might help would be to increase the log level in the config file and specify a logfile. When it dies, it will probably give you more info about why.
Might also look at your /var/log/messages, as that may have the reason for it stopping as well.
